Recipe, how to make "farinata":
A small mortar for spices, a bag of chickpea flour to make"farinata", a typical dish from Liguria
let stand for 2/3 hours, 3 ounces (hg.) chickpea flour well mixed in 1 liter of water and a bit of salt, then you put the liquid in two saucepans large enough with a few tablespoons of extra virgin olive oil, put it in a very hot oven for about 20 minutes, until golden brown. Serve warm slices. There are variations with the addition of blue cheese or onions or sausages or simply with rosemary and pepper.
