Recipes: Trofiette and Gnocchi

Good served with walnut sauce or "Pesto"(recipe in post)

Mix 500g of flour, water and salt, divide the dough into small dumplings and roll them on the fingers until it assumed the form of a little snail.

Mix 500gr. boiled potatoes still hot and 500gr. of flour, salt and water, tear it to pieces, roll out like cords and cut into small pieces, boil a little, drain with slotted spoon. Served with "Pesto", or walnut sauce, or butter and sage, or tomatoes sauce.
